WORKING MOM TIPS FOR EASTER

Easter is just around the corner and if you are reading this, then you are looking for tips & ideas on how to have a successful day with your family. Being a working mom, I know getting ready to celebrate any holiday can be stressful & chaotic with only having a limited amount of time to get what you want done.

Easter for my family has always been us going to the Easter mass then going to a family member’s home for a big meal & doing an Easter egg hunt in their backyard. That made celebrating pretty easy. All I had to worry about was getting my kids to church on time. This year, however, we are now in our own home with a big backyard, so my husband & I have decided that we are going to do Easter at home. Though we are excited to have the opportunity to do this & make new memories in our new home, I know that this means it will be more than looking pretty.

Being one that has to do it up & have minimal time to do it, below are some of my favorite tips that I have found to help me get ready for Easter and you as well!

Tips on Preparing for Easter

Here are some tips you can use to help prepare for a fun filled, stress free Easter with your family and/or friends.

Tip #1: Plan Ahead

Just like with anything, especially when you have a limited amount of time to do it, planning ahead will make a big difference. Decide what you want to do that day, what you want to eat and what you will need for the day. I love my lists, so having a special list just for Easter will help you see much easier what you have to do and or need to get prior to that day.

Tip #2: Work on To Do List Weeks Prior

This is not going to be the time to procrastinate. During your lunch break or when you are at the store, check your list to see what you can do or buy while you can. For example you can make your kids Easter baskets or fill those Easter Egg Hunt eggs during your lunch break. While at the grocery store, start stocking up on the items you will need for your Easter meal. Each week check a couple things off your list so that way when Easter weekend comes, all you will have to do is enjoy that time with your family and at worse, do a few last minute things that have to be done at that time, for example, buying vegetables for your Easter meal or making the hard boiled eggs everyone will devour.

Tip #3: Scale Back

You don’t need to have an elaborate Easter day. My family goes to Easter mass, do an Easter egg hunt & then a big Sunday dinner (ham, mash potatoes, stuffing and a couple vegetable dishes). Regardless if you are a Christian or not, Easter doesn’t need to be this big “party” where you have an elaborate meal and invite everyone you know to come. Let it be a stress free day for everyone, including yourself.

Tip #4: Accept the Help

If someone offers to make a dish or your significant other offers to stuff the Easter eggs. Let them. There is nothing wrong in having help. YOU DO NOT NEED TO DO EVERYTHING. I know I am the first to admit that I tend to be a control freak & no one can do it like me. I have learned through the years hosting holiday celebrations that accepting help is going to make life easier for everyone. If mommy is stressed out then no one is going to have a good day.

Tip #5: Do What You Can the Day Before

One thing for my family is that I really don’t have much time to get things done prior to my guests arriving. We do an early dinner (usually eat around 2) and my family goes to the 11 o’clock mass. So basically I only have a few hours in the morning to get done. Being the organizer mom that I am, I always try to do what I can the day before. Some of the things you can do the day before are:

  • Cook some dishes that can be placed in fridge & reheated when it’s time
  • Make sure everyone has their outfit ready to go
  • Clean & decorate your home- you can even get your dinner table all set & ready to go.
  • If possible, hide the Easter eggs for the Easter egg hunt.
  • Have each person’s Easter basket all set to give- don’t want to forget anyone!
  • Look at your list & make sure everything is checked off that needs to be checked off so you don’t need to do any last minute shopping trips.

I know hosting any holiday can be stressful & overwhelming, whether you are working mom or not. Just like with anything in life, preparation is key!

Easter Egg Hunt Tips

If your kids are like mine, the Easter egg hunt is something they are looking forward to. Here are some tips to help you have a successful & fun filled Easter egg hunt:

  • Prepare your eggs ahead of time. Whether you are using hard boiled eggs or plastic eggs. Make sure they are all set & ready to go before Easter Sunday.
  • Make sure to have at least 10-15 eggs per kid.
  • If possible, hide the eggs prior to guests arriving. Just make sure that kids can’t peak & try to find the eggs through your window.
  • If you can’t hide the eggs until that day, plan a fun activity to keep the kids busy while you or someone else hides the eggs.
  • Consider the kids ages when you are deciding on what prizes to put in the eggs & where to hide them.
  • Have a “grand prize” or “golden egg” that has a bigger prize in it. (This one usually gets the older kids into it).

Easter Meal Recipes

My family has always done an early dinner whenever it came to celebrating holidays. This was something my grandmother, the previous family hostess, would do & I just continued on the tradition. I do know though, that many families actually do more of a brunch. Here are some simple, easy to do recipes you can use for your Easter meal, regardless if it is a brunch or a dinner.

Hard Boiled Eggs

I found this recipe from Di Kometa from Dishin’ with Di. In the YouTube video below, she shows you how make perfectly hard boiled eggs & how to peel them with ease. She shows you how to make 2 recipes, my family uses the one without the relish.

Honey Bourbon Glazed Ham

I found this recipe on Southern Living’s article Easter Ham Recipes at www.southernliving.com.

Ingredients:

Honey-Bourbon Glazed Ham

  • 1 9 lb fully cooked, bone in ham
  • 40 whole cloves
  • 1/2 cup of packed light brown sugar
  • 1/2 cup of honey
  • 1/2 cup of bourbon
  • 1/3 cup of Creole mustard
  • 1/3 cup of molasses

Directions:

  1. Preheat oven to 350 degrees.
  2. Remove skin from ham & trim fat to 1/4 inch thick. Make shallow cuts in fat 1 inch apart in a diamond pattern. Insert cloves in centers of diamonds.
  3. Place ham in aluminum foil lined 13″ x 9″ pan.
  4. Stir together brown sugar, honey, bourbon, Creole mustard & molasses. Spoon over ham.
  5. Bake at 350 degrees on lower oven rack 2 hours and 30 minutes. Bast with pan juices every 30 minutes. Shield ham with foil after 1 hour to prevent excessive browning.
  6. Remove from oven & let stand for 30 minutes before serving.

Parsley Potatoes (Serves 4-6)

This is another recipe I got from my grandmother. I am not sure where she got it from but this dish is simple to do & is delicious!

Ingredients:

  • 1 1/2 lbs small red potatoes (scrubbed)
  • 1 tablespoon of vegetable oil
  • 1 medium onion (chopped)
  • 1 small clove of garlic (crushed)
  • 1 cup of chicken broth
  • 1 cup of fresh parsley (chopped)
    • Note: Fresh herbs are more potent & have more flavor then the jarred seasons you get in the store.
  • 1/2 teaspoon pepper

Directions:

  1. Peel a strip of skin from each of the potatoes then place them in cold water to soak.
  2. Heat a large skillet over medium/high heat then add vegetable oil to sautee onion & garlic for about 5 minutes or until the onions are tender.
  3. Add chicken broth & 3/4 cup of the parsley. Mix well. Bring to a boil.
  4. Place potatoes in a single layer in skillet and return to a boil. Reduce heat.
  5. Simmer, covered for 10 min or until potatoes are tender.
  6. Remove potatoes with a slotted spoon to a serving bowl. Add pepper to skillet, then stir.
  7. Pour sauce over potatoes & then sprinkle the rest of the remaining parsley on top.

Rainbow Easter Peeps Fruit Kabobs

These rainbow Easter Peeps fruit kabobs are SO PRETTY! And they're so simple to make. Such a fun and healthy idea for a Easter snack and a great alternative to candy!

I found this recipe on Pinterest & I am excited to make this for Easter. This is a great recipe if you are doing a brunch or dessert for your Easter dinner.

Ingredients:

  • Easter bunny peeps
  • Strawberries
  • Cantaloupe
  • Pineapple
  • Green & Red Grapes
  • Blueberries
  • Wooden skewers

Directions:

  1. Cut the fruit into bite size pieces (about 1 inch thick) that are big enough to be placed on skewer.
  2. Skewer the fruit onto the stick (Red Grape, Blueberries, Green Grape, Pineapple, Cantaloupe & Strawberry). Make sure there is enough room on top for your Easter bunny peep.
  3. Run the tip of the skewer under water or dip into a cup of water. Being wet, slide the Easter bunny peep onto the skewer. The wetness makes it easy to slide the peep on.
  4. Place completed skewers on a plate in an arch to give the rainbow effect.

Spiced Salmon (6-8 Servings)

I found this recipe on Taste of Home website at www.tasteofhome.com.

Ingredients:

  • 2 tablespoons of packed brown sugar
  • 1 tablespoon of soy sauce (or do what I do, 1 package of soy sauce you get from the Chinese restaurant)
  • 1 tablespoon of butter, melted
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of ground mustard
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of pepper
  • 1/4 teaspoon dill weed
  • Dash of salt
  • Dash of dried tarragon
  • Dash cayenne pepper
  • 1 salmon fillet (about 2 pounds)

Directions

  1. Mix all ingredients except salmon. Brush over salmon.
  2. Place salmon, skin side down, on an oiled grill rack or on a slightly oiled baking sheet. Grill covered over medium heat or broil 4 inches from heat until fish begins to flake easily with a fork. Should take about 10-15 minutes to cook.
